It's too hot to cook

If you've been reading my blogs or following me on Facebook or Instagram, you probably know already that I'm a bit of a Suzyhomemaker. I love to cook, mess around my garden, and explore new recipes.

Well... not this week.

It's been a brutal July here in Denver. There is zero motivation in my house right now to open a stove or turn on a burner.

If you're in the same boat.... try this Summer salad that I whipped up this week:

It's really easy and packed with nutrition.

You'll need:

Bag of spring mix salad

1 large or 2 small chopped cucumbers

3 sprigs of chives (some leeks, spring onions, or scallions would also be great in here)

2-3 plumbs (pitted and chopped into bites)

1/4 cup feta cheese

1/4 cup walnuts

Champagne vinaigrette to taste (EVOO, avocado oil and some light rice or red wine vinegar would be great as well)

I like to layer my salads for presentation, so you can place your ingredients in the bowl in the order they are listed, or toss em all together and serve.
